		<description>excellent piece and very informative. I was telling my husband about your challenge and I&#039;m also doing that this week. i totally agree about the value of food stamps at farmers markets and supermarket walk-throughs for the purpose of education. I also absolutely understand that your situation and my situation are quite different than people who must live this way day in and day out.
 I happen to live in the country where fresh food is plentiful and cheap. Our property is too rocky and dippy to grow anything but I am able to grow most herbs in wine barrels. I can my own pickles, make my own ice cream and also preserve anything I can in the summer months so I am lucky enough to have a larder of stuff to draw on. You have even inspired me to make my own bacon. Since as a writer I work at home, and always have. I am also in a similar situation to you in that I&#039;m here at home to cook every day. I cannot imagine what it would be like to be doing all the cooking I do and also have to report to an outside job where I really have to wear grown up pants and real shoes and also commute.
  Still the United Ways&#039; challenge is a great wake up call.</description>

I can say (from experience!) that extra time is the key, and that&#039;s the main ingredient most people in any economic situation don&#039;t always have. You bring up the valuable lesson that there is a vicious circle at work -- even for people who try to cook meals at home, they often don&#039;t have the spare time, so shortcuts are taken. I wonder if there is a challenge out there to cook within a set budget, but figure out healthy/time-sensitive shortcuts for those with all levels of kitchen skills?</description>
