We made Ruhlman&#039;s corned beef last week too, but cooked it in the slow cooker (we don&#039;t have a sous vide machine). I&#039;ve heard that you can vacuum pack and then cook in water in the slow cooker b/c the high setting is about 175F. Have you tried that?

Mark and I just did a full kitchen remodel in our Woodinville home and I have been trying to learn to cook better now that I have a nicer kitchen so I enjoy reading your site. My brother is also a chef in Poulsbo, Wa and Mark and I enjoy nice food, although as a science person cooking doesn&#039;t come naturally (I have try try harder to be creative) :)  I am a pharmacist!
